Obviously, I will start with my favorite.
Sol Bianca (ソルビアンカ) from the series of the same name.

Status: galaxy wide wanted pirates
Description:
Can warp without a gate.
It transforms in order to fire the main weapon.
charge particle hull reinforcement
normal defense and regeneration shield
particle synthesis as part of selfrepair system
can project hologram in- and outside the ship
hull consists of pure Pasha
there are (two) spacious parks inside the ship
the bridge consists of moveable independent control capsules (similar to Saber Raider's Ramrod)

History background:
A lost ship from the last human war. The only survivor of it's fleet of likewise ships. The fleet was allegly betrayed by the command ship.
Recovered by April Bikirk and Feb Fall.
Anime history:
1990
One of the first ship to be fully animated throughout the series.
The design was topologically reused as a plane in Towards the Terra.

History Background:
The second ship recovered by another team on Earth. However, they crash landed killing all except one. The ship has the same type of bioroid as Sol Bianca called Noal. It is assumed to be an ancient enemy.

Class: Luxus Liner
Dimension: W x km

History Background:
This Luxus liner was the site of an incident involving the theft of Pasha. Pirates using molecular tunneling borded and killed numerous passengers and crews before napped themselves by the Sol Bianca crew.
Anime history:
The design was topologically reused in some later animations, possibly Star Trek
